Iowa Party Potatoes

Ingredients

  • 2 pound bag of frozen hash brown potatoes
  • ½ cup melted butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cans of cream of chicken soup (good alternative for vegetarians is Cream of Mushroom Soup)
  • 1 pint of sour cream
  • ½ cup of finely chopped onions (optional)
  • 10 oz. or 2 pkg. of shredded cheddar cheese

Topping (if choosing to bake rather than make in a slow cooker)

  • 2-3 cups crushed corn flakes
  • ½ cup melted margarine

Directions

Thaw potatoes and combine all ingredients in a large mixing bowl. Transfer mixed ingredients into a large slow cooker set to High temperature. Cook for approximately 3-4 hours, or until potatoes are tender and all ingredients are melted and hot. 

Or for an oven baked version: 

Preheat the oven to 350 degrees. Put mixed ingredients into a greased large casserole baking dish and sprinkle topping on. Bake for 1 to 1 ½ hours.
