Bacon and Rice Casserole

Ingredients

  • 3-4 white onions chopped
  • 3 cups medium grain rice
  • 1 lb. Low sodium bacon chopped
  • 3 cans Campbells beef consomé soup
  • Parmesan cheese

Directions

In a pot cook chopped bacon, do not discard grease. Cook onions with the bacon grease, once the onions and bacon are cooked, add the rice and the beef consomé. Add 1 can of water and let the rice, bacon, onion mixture boil until the water starts to evaporate. Stir, cover and lower the temperature to low for 15 minutes. After the rice is done, stir to separate the grains and add the cheese.
