Poppy Seed Cake

Ingredients

Ingredients for Cake:

  • ½ cup poppy seeds (soak in water for 1 hour)
  • 1 cup milk
  • 1 ½ cups sugar
  • 1 egg yolk
  • ½ cup Oleo (Margarine)
  • 2 cups flour
  • 2 teaspoons Baking Powder 
  • 1 teaspoon vanilla extract
  • 3 egg whites

Ingredients for the filling: 

  • 1 cup milk
  • ⅓ cup sugar
  • 2 tablespoons flour
  • 2 egg yolks

Directions

Instructions for the cake: 
Begin by soaking your poppy seeds in water for an hour. Preheat your oven to 350 degrees Fahrenheit. Drain your poppy seeds and mix together with all ingredients aside from your 3 egg whites. In a separate bowl, beat your 3 egg whites on high speed until stiff peaks form. Fold into the other ingredients gently. Pour into a greased, 9-inch round cake pan. Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

Instructions for the filling:
In a pan, scald your cup of milk and then pour it slowly over the other ingredients in a separate (heatsafe) bowl. Once combined, cook until the mixture thickens. Use to fill the cake with after cutting the cake into two layers.
